The Cottage Cooking Club

Schamong Kaffee - Artisan Coffee Roaster "Schamong" (Cologne, Germany)


Coffee. Coffee is a beverage that certainly brightens my day.
I love to drink coffee. Whether I prepare it with my coffee machine, my espresso maker or my lever espresso machine. Whether I am on the road, drop by a corner coffeeshop, or while running errands. Of course, the coffee does not always taste great but I always look forward to enjoying a good cup of coffee with a great deal of anticipation. That´s just everyday life.
But there are still moments that let me pause for a little longer than usual, those moments when I have come across something special that stands out from the routine of that everyday life. My most recent such exiting "discovery" is an artisan coffee roasting company called "Schamong" in the City of Cologne, Germany. Founded in 1949, it is the oldest coffee roasting company in that city.

Kaffee. Kaffee weckt mich am Morgen, begleitet mich durch den Tag.

Ich trinke furchtbar gerne Kaffee. Ob aus der Kaffeemachine, dem Espressokocher oder Siebträger, in unserer Küche, unterwegs, beim Einkaufen, in einem Café an der Straßenecke oder auf Reisen. Es schmeckt nicht immer gleich gut. Aber ich freue mich jedes Mal auf eine gute Tasse Kaffee. Alltag eben.

Trotzdem gibt es immer wieder diese besonderen Momente, an denen ich ein wenig länger als sonst innehalte und in denen ich bemerke, dass ich doch mal etwas Besonderes gefunden habe.
Meine neuste, besondere Entdeckung ist "Schamong". 1949 gegründet, ist es die älteste Kaffeerösterei in der wunderschönen Stadt Köln.




A roastmaster is responsible for the roasting. This is a technical skill which approaches an art form. It takes years of training to become an expert roaster with the ability to "read" the beans and make decisions with split second timing. The difference between perfectly roasted coffee and a ruined batch can be a matter of seconds. Holger Nagel is the roast master responsible for roasting all the coffee beans at Schamong.
Röstmeister Holger Nagel ist für den Geschmack dieses Kaffees verantwortlich. Dass Kaffeerösten echtes Handwerk ist und mit Leib und Seele ausgeführt wird, darf man im Geschäft von "Schamong Kaffee" in der Venloer Straße 535 in Köln erleben. Buchstäblich alle Sinne benötigt Holger Nagel, um den unscheinbaren grünen Rohkaffee zu den bekannten hell- bis dunkelbraunen Bohnen zu veredeln.




If you walk down "Venloer Staße" (Venloer Street), you cannot help but notice a large window with golden letters indicating "Schamong Kaffee - Kölns älteste Kaffeerösterei" (Schamong Coffeeshop - The oldest coffee roasting company in Cologne). You can also see the reflection of the houses across the street in that very same window. I was born in and spent the first years of my life in another part of Cologne, not too far from "Ehrenfeld", the part of town where you find Schamong.
Von der Straße aus sieht man beim Bummeln auf der Venloer Straße ein großes Schaufenster mit goldenen Buchstaben, in dem sich die Häuser des Stadtteils Ehrenfeld spiegeln. "Schamong Kaffee" ist dort zu lesen, "Kölns älteste Kaffeerösterei". Nicht weit von hier, im Stadtteil Lindenthal, bin ich geboren und habe die ersten Jahre meines Lebens verbracht. Nach meiner Geburtsurkunde war ich Baby Nr. 4711 des Jahres, was in Köln eine wirklich recht bekannte Zahl ist.




Once you enter the store, you will immediately notice the cast iron coffee roaster "Probat UG 15n". This roaster has been used by the Schamong family for more than half a century. And every single cooffee bean that is sold here gets roasted in this very machine.

Next to the roaster, every single batch of roasted coffee beans will be submitted to a manual quality control - in order to find any impurities that might have gotten in between the coffee beans.
Tritt man dann bei ein, steht man direkt vor dem gusseisernen Trommelröster Probat UG 15n, der von Familie Schamong seit mehr als einem halben Jahrhundert für die Röstung ihrer Kaffeebohnen eingesetzt wird. In dieser Maschine wird jede Kaffeebohne geröstet, die später zu Kaffee oder Espresso verarbeitet wird.
Direkt neben dem Röster werden die Bohnen in einer letzten Kontrolle von Hand von möglichen Verunreinigungen befreit, die bei Ernte und Transport in die Kaffeesäcke geraten sein könnten.




Roasting causes numerous chemical changes to take place as the beans are rapidly brought to very high temperatures. When they reach the peak of perfection, they are quickly cooled to stop the process. Roasting transforms green coffee into the aromatic brown beans. Most industrial roasting machines maintain a temperature of about 600 to 800 degrees for a few minutes only. After that, the beans are quickly cooled off with water. But at Schamong where the traditional cast iron drum roaster is still in use, the slow roast method of not heating the beans to more than180 to 240 degrees for 12 to 18 minutes, yields far superior quality coffee. This process of slow roasting is at the heart of roasting. It is what produces the flavor and aroma of this artisan coffee.
Beim traditionellen Trommelröstverfahren werden die anfangs noch grünen Bohnen im schonenden Langzeitverfahren bei 180 bis 240 Grad zwischen 12 und 18 Minuten geröstet. Durch diese lange Röstdauer können sich die Geschmacksstoffe voll entfalten, wobei gleichzeitig die Bitterstoffe im Hintergrund bleiben. Im Gegensatz dazu werden Kaffeebohnen in industriellen Röstereien durch "Schockröstung" für nur wenige Augenblicke bei Temperaturen mit bis zu 600 bis 800 Grad gebrannt, anschließend mit Wasser schnell wieder abgekühlt. Dieses Heißluftröstverfahren ist zwar günstig und effizient, wegen der kurzen Röstzeit und der extremen Hitze können die Bohnen jedoch nicht besonders gleichmäßig geröstet werden.




When the beans are removed from the roaster, they are immediately cooled either by air or water. Roasting is generally performed in the importing countries because freshly roasted beans must reach  the consumer as quickly as possible.The beans are kept moving throughout the entire process to keep them from burning. Once the roasting process is finished, Holger Nagel, Schamong´s roast master, opens the ledge from the drum roaster to release the hot coffee beans onto a cooling rack. This swooshing sound of the tumbling coffee beans combined with the uncomparable smell that emerges from the roaster and wafts throughout the store, is a most unique experience.
Bei "Schamong" prüft Holger Nagel während des Röstens immer wieder die Farbe, den Geruch und auch den Geschmack der Bohnen. Schließlich, wenn der Röstvorgang beendet ist, muss der Kaffee abgekühlt werden, damit er nicht weiter röstet. Der Röstmeister öffnet eine eiserne Klappe und die fertigen, noch sehr heißen Kaffeebohnen rauschen aus der Trommel in ein großes Sieb zum Abkühlen. Dieses Rauschen, verbunden mit dem unvergleichlichen Duft, den die frisch gerösteten Bohnen verbreiten, erfüllt den ganzen Raum mit einer einzigartigen Atmosphäre.


 

After the beans have had the chance to cool by air  and have passed the last manual quality control, part of them will be immediately sold at the store, the other part will be used to re-fill all those coffee containers and mills at the store. If you buy your coffee beans on location, the friendly staff will package your beans using vacuum packaging with a valve which serves as an escape for to the natural gases inside the package and at the same time prevents oxygen from entering the package.
Nach dem Abkühlen, allein durch Bewegung und "frische Luft", und einer letzten Kontrolle kommen die Kaffeebohnen sofort in den Verkauf oder werden für den Ausschank in die Kaffeemühlen gefüllt. Da die frischen Bohnen noch mehrere Wochen nach dem Rösten "ausgasen", werden sie stets in Packungen mit einem Aromaventil gefüllt. So können die Gase des Kaffees entweichen, ohne dass Sauerstoff an die Bohnen gelangt.

While shopping for your freshly roasted coffee beans, or lingering at the store while watching the daily roasting procedure, you can enjoy a wide variety of freshly brewed coffees - including cappuccino, lattè macchiato, a flat white or a cup of regular coffee.
Während man seine frisch gerösteten Kaffeebohnen kauft oder bei der täglichen Röstung zuschaut, sollte man auf jeden Fall eine der Kaffeespezialitäten probieren. Die Kaffeekarte reicht von Espresso, über Cappuccino, Lattè Macchiato, Flat White, traditionellem Kaffee und vielem mehr.




The barristas will prepare your coffee using different kinds of  coffee preparation, including the use of drip filters, lever espresso makers or a siphon coffee maker.
Es werden verschiedene Zubereitungsarten angeboten, zum Beispiel Filterkaffee, Siebträger oder Kaffee Syphon.




Apart from the wonderful coffee, you can find all kinds of barista equipment necessary for brewing that perfect cup of coffee at home.

Coffee should always be poured it into a warmed coffee cup so that it will maintain its temperature as long as possible. And don´t  these lovely espresso, cappuccions and caffè latte cups look so very pretty all lined up on top of that level espresso maker.
Auf der Maschine werden die Tassen auf die optimale Temperatur vorgewärmt. So kühlt gerade der Espresso nicht sofort ab, wenn er eingeschenkt wird. Und auf der weißen "Marzocco" sehen die weißen Tassen auch sehr nett aus.




Pruned short in cultivation, but capable of growing more than 30 feet high, a coffee tree is covered with dark-green, waxy leaves growing opposite each other in pairs.  Coffee cherries grow along the tree's branches.  It takes nearly a year for a cherry to mature after the flowering of the fragrant, white blossoms.The coffee cherry's outer skin is called the exocarp, beneath it is the mesocarp, followed by the parenchyma.  The beans themselves are covered in a parchment-like envelope named the endocarp, more commonly referred to as "the parchment". Inside side-by-side lie two beans, each covered separately by yet another layer of "silver skin". All of these layers have to be removed before the green beans are shipped around the world. The milled beans, are loaded onto ships for transport to the importing countries. Green coffee is shipped in either jute or sisal bags, rare blends are packaged in wooden barrels.
Die zunächst noch blass-grünen und nach Heu riechenden Kaffeebohnen werden vor der Röstung als Rohkaffee bezeichnet. Kaffeebohnen sind die Samen des Kaffeebaums oder -strauchs. Die Bäume könnten bis zu 10 Meter groß werden, werden durch Beschnitt aber deutlich kleiner gehalten. Am Baum wachsen die Früchte, die sogenannten "Kaffeekirschen". Nach der Ernte wird die gesamte Umhüllung (Fruchthaut und -fleisch, Pergamenthaut und Silberhäutchen) entfernt, sowie ein Großteil des in der Bohne enthaltenen Wassers. Anschließend werden die Bohnen in die charakteristischen Jutesäcke verpackt, die Hersteller, Sorte, Ursprungsland und manchmal auch die Mailadresse verraten. Beim Verpacken geraten auch schon mal Fremdkörper, wie kleine Steinchen oder Holzsplitter, in die Säcke. Damit diese nicht in die Mahlwerke der Kaffeemühlen geraten, werden sie bei der Endkontrolle bei Schamong aussortiert.




Roasting is a heat process that turns coffee into the fragrant, dark brown beans with which we are most familiar. Before being roasted, the beans are stored green, a state in which they can be kept without loss of quality or taste. Roasting brings out the aroma and flavor that is locked inside the green coffee beans.  A green bean has none of the characteristics of a roasted bean.  It is soft and spongy to the bite and smells green, almost "grassy."Once roasted, however, they should be used as quickly as possible before the fresh roast flavor begins to diminish.
Während der Röstung verändert sich die Farbe des Röstkaffees von leicht braun über mittel- und dunkelbraun bis hin zu öligem schwarzbraun. Die Kunst des Röstmeisters besteht darin, zu entscheiden, an welchem Punkt die Röstung abgebrochen werden sollte, um das bestmögliche Geschmacksbild aus einem Rohkaffee herauszukitzeln. Beim Röstvorgang können bereits wenige Sekunden Röstzeit den Unterschied machen. Auch minimale Temperaturabweichungen während des Röstens können aus derselben Sorte Rohkaffee enorm unterschiedlich schmeckende Kaffees erzeugen..




Schamong offers a very classic espresso blend called Coloniese, made from 100 % arabica beans. Not only does this espresso taste fabulous when consumed freshly brewed but it can also be turned into an ingredient for Biscotti. This particular espresso blend tastes bold and invigorating with flavor notes of dark chocolate and caramel. This blend also received the honor of being recommended as one of the best by "Der Feinschmecker" (The Gourmet) magazine.
Other espresso roasts that you can find at Schamong include the Espresso Amalfitano (received the gold medal in 2014 from the German  Coffee Roasters Guild), the Espresso Fiorentiono (received the silver medal in 2010 of the German Coffee Roasters Guild), Romano, Neapolitano and a Decaf Espresso Blend.
Schamongs Espressoklassiker Coloniese, der aus 100% Arabicabohnen besteht, schmeckt nicht nur fantastisch, er macht sich auch wunderbar als Zutat für Biscotti. Die Espressomischung ist recht kräftig und belebend, mit Noten von Zartbitterschokolade und Karamell. Dieser Espresso wurde auch von "Der Feinschmecker" empfohlen.

Schamong führt weitere Espressomischungen, wie den Espresso Amalfitano (2014 prämiert mit der Goldmedaille der Deutschen Röstergilde), den Espresso Fiorentiono (2010 prämiert mit der Silbermedaille der Deutschen Röstergilde), Romano, Neapolitano und einen Espresso Decaf.




During our most recent visits to the store, I could not help buying some espresso cups to add to my ever growing collection of coffee cups. I really enjoy these because not only do they look elegant and pretty with that nostalgic logo and lettering but they are also nice and chunky - meaning that they retain heat rather well.
Bei unserem letzten Besuch haben wir dann auch neben jeder Menge frisch geröstetem Kaffee gleich mal Espressotassen mit dem wunderbaren nostalgischem Logo und Schriftzug erstanden - ich mag diese dickwandigen Tassen wirklich gerne, denn darin bleibt der Kaffee schön lange warm.




While at Schamong, I bought two different coffee blends that are very popular with the Schamong customers. First there is the "Kölner Melange" (Cologne Blend), which is a blend of central- and southamerican coffees and espresso beans. This blend is bold tasting and yet due to the careful roasting it has a very low acid level. In 2010, this coffee received a "quality seal" from a well-known German consumer magazine. In 2013, the same coffee also received a gold medal from the German Coffee Roasters Guild. Trust me, it tastes quite delicious!

The second blend I bought that day was the "Ehrenfeld Spezial", named after the area where the company is located - the origins of this blend date back to the beginnings of Schamong itself. It is a medium roast with a strong flavor with spicy undertones and hints of mild liquorice. This blend consists of Southamerican coffees from Brasil and Columbia.
Zwei Kaffeemischungen habe ich gekauft, die sich besonders großer Beliebtheit erfreuen. Einmal die Kölner Melange, die aus aus zentral- und südamerikanischen Kaffee- und Espressobohnen besteht. Diese Mischung ist kräftig, mit rassigem Aroma und aufgrund der schonenden Röstung sehr säurearm. 2010 wurde sie mit "Sehr Gut" von "Ökotest" ausgezeichnet. Und 2013 wurde sie durch die Goldmedaille der Deutschen Röstergilde prämiert. Der Kaffee schmeckt wirklich ganz fantastisch!

Dann die Mischung Ehrenfeld Spezial, eine traditionsreiche Hausmischung, die es schon genauso lange wie die Rösterei selbst gibt. Eine harmonische, mittelkräftige Zusammenstellung südamerikanischer Kaffees aus Brasilien und Kolumbien, leichten Anklänge von milder Lakritze und würzigen Aromen.




To go with this wonderful tasting artisan coffee, I created a recipe for Biscotti - this recipe for coffee-flavored Hazelnut, Dark Chocolate & Espresso Biscotti "Schamong" will certainly add a bit of buzz to your baking. Combining the flavors of espresso with dark chocolate, vanilla, cinnamon and hazelnuts in these cookies makes for wonderful little treats to enjoy with your favorite cup of coffee, tea or hot chocolate in the afternoon or any time you are looking for a sweet “pick-me-up”.
Passend zu diesen wunderbaren Kaffees habe ich mir ein Rezept für Biscotti überlegt.
Espresso, dunkle Schokolade, Vanille, Zimt und Haselnüsse harmonieren auf ganz besondere Weise in diesen kleinen Leckereien, die man natürlich besonders gut mit einer Tasse Kaffee, Tee oder heißer Schokolade genießen kann. Wenn man auf der Suche nach einem süßen "Muntermacher" ist, sind diese Haselnuss, Schokolade & Espresso Biscotti "Schamong" genau das Richtige.




Coffeeshop Biscotti "Schamong"

Ingredients for the Cookies
  • 200 grams (7 ounces) whole hazelnuts, toasted or not
  • 250 grams ( 8.8 ounces/2 cups) wheat flour, plus some for the work surface
  • ½  tsp baking powder
  • ½ tsp baking soda
  • a pinch of fine sea salt
  • 1 tsp ground Ceylon cinnamon
  • 140 grams (5 ounces) super fine (caster) sugar
  • 2 tsp pure vanilla sugar
  • 60 ml freshly brewed espresso, cooled (I used Schamong Espresso Coloniese) NOTE: 60 ml espresso is equal to a double espresso or espresso doppio
  • 25 grams (0.8 ounce/2 tbsp) unsalted butter, room temperature
  • 1 egg (L), free range or organic
  • 100 grams (3.5 ounces) dark chocolate, 70% cocoa solids,  chopped
Coffeeshop Biscotti "Schamong"

Zutaten für die Biscotti
  • 200 Gramm ganze Haselnüsse (zum Beispiel Sorte "runde Römer"), geröstet oder nicht
  • 250 Gramm Weizenmehl, plus ein wenig für die Arbeitsfläche
  • ½ TL Backpulver
  • ½ TL Natron 
  • eine Prise feines Meersalz
  • 1 TL gemahlener Ceylon-Zimt 
  • 140 Gramm feinster weißer Zucker
  • 2 TL Bourbon Vanillezucker
  • 60 ml frisch gebrühter Schamong Espresso Coloniese, abgekühlt HINWEIS: 60 ml Espresso entspricht einem Espresso doppio oder doppelten Espresso
  • 25 Gramm ungesalzene Butter, Zimmertemperatur 
  • 1 Ei (L), Freilandhaltung oder Bio 
  • 100 Gramm dunkle Schokolade mit 70 % Kakaoanteil, gehackt 


Preparation of the Biscotti
  1. Line a baking sheet with parchment paper (or use Silpat baking mat).
  2. On the baking sheet toast hazelnuts in one layer in middle of oven 10 to 15 minutes, or until lightly colored and skins are blistered. Wrap nuts in a kitchen towel and let steam for about one minute. Rub nuts in a tea towel to remove loose skins (it does not matter if not all of the skins come off) and cool completely.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, sugar, and vanilla sugar until well combined.
  4. Transfer the dry ingredients to the bowl of your mixer and add the espresso, butter and egg. 
  5. Then beat the wet ingredients into the flour mixture until the mixture is well combined and comes together as a dough.
  6. Add the whole hazelnuts and the chocolate and combine well. 
  7. Divide the dough into two equal parts.
  8. Wrap each dough piece in plastic wrap and place in refrigerator for about thirty minutes and up to a day. 
  9. Preheat your oven to 350 degrees Fahrenheit.
  10. Dust your work surface with the remaining flour. Take the first batch of dough out of the refrigerator and using the palms of your hands, roll the Biscotti dough into a cylinder shape on the dusted surface. Flatten the dough a little to form an oval cylinder if you wish. Repeat with the remaining dough. 
  11. Transfer the dough logs to a baking sheet and bake for about 15 minutes, or until the logs have spread and doubled in size. 
  12. Remove the baking sheet from the oven and set aside on a wire rack to cool a bit. 
  13. When the logs have cooled but are still warm, slice each about 1cm (½ inches) thick, you should cut on the diagonal, using a very sharp knife.
  14. Place each Biscotti slice onto a baking sheet or onto cooling racks that you place onto the baking sheets thereby allowing for the hot air to circulate around each Biscotti cookie slice. Return the baking sheets to the oven for a further 10 to 15 minutes, or until crisp, golden-brown and cooked through.
  15. Transfer to cooling racks and cool completely.
  16. When the Biscotti have completely cooled, place them in cookie tins, between layers of parchment, they will keep for quite some time.

Zubereitung der Biscotti
  1. Ein Backblech mit Backpapier auslegen oder Silpat Backmatten verwenden.
  2. Die Nüsse auf einem mit Backpapier ausgelegten Backblech ausbreiten und für 12 bis 15 Minuten rösten. Die Nüsse auf ein Küchentuch geben, einschlagen, eine Minute ruhen lassen und dann das Tuch durchkneten und die Nüsse reiben bis die Haut der Nüsse abfällt. Dabei darf ruhig etwas Haut an den Nüssen bleiben. Nüsse auskühlen lassen.
  3. In einer großen Schüssel Mehl, Backpulver, Natron, Salz, Zimt, Zucker und Vanillezucker mischen.
  4. Dann Espresso, Butter und das Ei zu der Mehlmischung hinzufügen.
  5. Dann alle Zutaten mischen und zu einem glatten Teig kneten.
  6. Die ganzen Haselnüsse und die Schokolade in den Teig einarbeiten.
  7. Den Teig halbieren. 
  8. Die Teighälften in Frischhaltefolie einwickeln und für zirka 30 Minuten und bis zu einem Tag in den Kühlschrank legen.
  9. Den Backofen auf 180 Grad Celsius (Elektro) vorheizen.
  10. Das restliche Mehl auf die Arbeitsfläche geben. Eine Teighälfte aus dem Kühlschrank nehmen und mit den Handflächen einen schmalen, länglichen Laib formen (ungefähr so lang wie das Backblech breit ist). Mit der zweiten Teighälfte genauso verfahren. 
  11. Die Laibe auf das mit Backpapier belegte Backblech legen und für etwa 15 Minuten backen oder bis die Laibe sich (in der Breite) verdoppelt haben.  
  12. Das Backblech aus dem Ofen nehmen und auf einem Kuchenrost etwas abkühlen lassen.
  13. Wenn die Laibe abgekühlt aber noch warm sind, in etwa 1 cm dicke Scheiben schneiden. Am besten schräg, mit einem scharfen Messer.
  14. Jede Biscotti Scheibe erneut auf das Backblech legen oder, besser noch, auf ein Kuchenrost legen, das auf das Backblech gestellt wird, damit die heiße Luft um jedes einzelne Keks zirkulieren kann und die Biscotti so gleichmäßiger gebacken werden. Das Backblech für weitere 10 bis 15 Minuten in den Ofen geben oder bis die Biscotti knusprig und goldbraun gebacken sind.
  15. Die fertg gebackenen Biscotti aus dem Ofen nehmen und vollständig abkühlen lassen.
  16. Wenn die Biscotti vollständig abgekühlt sind, kann man sie in Keksdosen, am besten zwischen Lagen von Pergamentpapier lagern, so halten sich die Kekse eine ganze Weile frisch.

FFwD: Baby Bok Choy, Sugar Snaps, and Garlic en Papillote


Today´s recipe for the French Fridays with Dorie group is "Baby Bok Choy, Sugar Snaps, and Garlic en Papillote" – most often used in Asian cooking, baby bok choy takes rather well to the French technique of cooking  vegetables en papillote.
Das heutige Rezept für die French Fridays with Dorie Kochgruppe ist “Baby Bok Choy, Erbsenschoten und Knoblauch en Papillote”- Baby Bak Choy kennt man ja aus der Asiatischen Küche, eignet sich auch ganz wunderbar für die schonende Garmethode en Papillote.




Bok choy (or Pak Choi)  has a number of different names, including horse's ear, Chinese celery cabbage and white mustard cabbage. This leafy green Chinese vegetable belongs to the cabbage family, but it tastes more like spinach than cabbage. The bok choy has either white or very pale green short, chunky ribbed leaf stalks and glossy, deep green leaves. The leaves and stems of the regular boy choy are best suited to brief stir-frying or steaming so they retain their mild flavor. Go for bak choy with perky-looking leaves and firm, unblemished stalks. The smallest examples tend to be the most tender. If you like you can cut the leaves from the stems, as they cook at different speeds - the leaves cook much quicker, so you could add them just towards the end of cooking. Very young bok choy, or, as Dorie´s recipe calls for, so-called baby bok choy can be left whole, or halved or quartered  If very young it can be eaten raw in salads, but I still prefer it when briefly cooked.
Bok Choy (auch Pak Choy), deutsch auch Senfkohl oder Blätterkohl genannt, ist ein naher Verwandter des Chinakohls aber schmeckt eher wie Spinat. Die Blätter sind dunkelgrün, ähnlich dem des Mangolds. Der Bok Choy hat entweder weiße oder sehr blassgrüne, kurze, gerippte Blattstiele und glänzende, meist tiefgrüne Blätter. Die Blätter und Stengel eignen sich am besten für Stir-fries oder zum Dämpfen, so behalten sie auch ihren milden Geschmack. Man sollte beim Kauf immer darauf achten, Bok Choy mit knackigen, frisch aussehenden Blätter und festen, makellosen Stielen auszusuchen. Am besten schneidet man die Blätter von den Stielen und kocht sie nacheinander, da die Garzeiten verschieden sind. Man fängt also mit den kleingeschnittenen Stielen an und gibt dann am Ende der Garzeit die Blätter hinzu. Sehr junger Bok Choy oder, wie in Dories Rezept, sogenannter Baby Bok Choy, kann im Ganzen gekocht, halbiert oder geviertelt werden. Wenn der Bok Choy noch sehr jung ist, kann er auch roh in Salaten gegessen werden, wobei ich ihn aber am liebsten nur kurz blanchiere.




Mangetout (in French "manger" means "to eat" while "tout" means "everything") or sugar snaps are undeveloped garden peas, picked while the pod is still edible, they are relatively sweet tasting.  Similarly, petits pois are young garden peas that are picked and shelled when small, young and tender. Unlike mangetout pods, the pods of garden peas are too tough to eat, but popping fresh peas straight from the pod into your mouth remains one of life's great pleasures. You should always go for the fresh peas with bright green pods that are firm and plump. Since I could not find good mangtout, I went with fresh garden peas instead. To no ill effect.
Mangetout (frz. von manger = essen und tout = alles) Erbsenschoten oder Zuckerschoten unterscheiden sich von Erbsen dadurch, dass man ihre Hülse mitessen kann und sie einen besonders hohen Zuckergehalt haben. Im Gegenteil zu den Hülsen der Erbsenschoten, kann man die Hülsen der Erbsen nicht mitessen. Für mich jedoch ist es eine der großen Freuden, frische Erbsen direkt aus der Hülse zu verspeisen. Beim Kauf von Erbsen sollte man immer darauf achten, frische Erbsen mit hellgrünen und festen Schoten auszusuchen. Da ich beim Gemüsehändler keine Erbsenschoten finden konnte, dafür aber wunderbare frische Erbsen, habe ich eben die gekauft. Hat sich aber eher positiv auf das Geschmackserlebnis ausgewirkt.




Dorie´s recipe not only calls for baby bok choy and peas but also for baby white onions which I could not find at the green grocer, so I substituted them with French shallots Then there is finely sliced garlic, orange zest, olive oil, and salt and pepper – I opted to skip the fresh mint.
Für Dories Rezept braucht man aber nicht nur Baby Bok Choy und Erbsen, aber auch kleine weiße Zwiebeln, die ich mit französischen Schalotten ersetzt habe. Desweiteren braucht man fein geschnitten frischen Knoblauch, Orangenzesten, Olivenöl und etwas Salz und Pfeffer – ich habe mich entschieden, um die frische Minze wegzulassen..




This recipe is a rather simple recipe. In order to create the little packages, all the lovely ingredients get wrapped up in parchment paper and foil with pepper, salt and some olive oil. After the packages have baked for a mere 15 minutes they will emerge from the oven not only delicious but also perfectly steamed.
Das Rezept ist sehr einfach, man bettet einfach die Zutaten auf Backpapier und Folie, bestreut diese mit Pfeffer und Salz, gibt noch etwas Olivenöl hinzu und schließt das Backpapier-Päckchen. Das geht sehr einfach und schnell – nachdem die Päckchen die angegeben 15 Minuten im Ofen gegart haben, hat man eine wunderbare, leckere und perfekt gegarte Gemüsebeilage.




The technique of cooking en papillote certainly makes for a nice preparation and cooking this way keep moisture as well as flavor intact – who does not like to open up a package at the table, full of wonderful, healthy spring vegetable and have the aromas waft at them. But you might want to consider baking the packages after baking (like I did), when the oven is already pre-heated or prepare a whole bunch of packages at the same time (like I did as well).
Durch die Technik des sanften Garens en papillote kommen die Aromen der verschiedenen Komponenten sehr gut zur Geltung und die natürlichen Aromen des Gemüses bleiben erhalten. Wer mag es nicht, bei Tisch so ein nettes Päckchen, voll wunderbaren, gesunden und duftenden Frühlingsgemüsen zu öffnen. Aber man sollte in Erwägung ziehen, die Päckchen zum Beispiel nach dem Backen (wie ich), wenn der Ofen bereits vorgeheizt ist zuzubereiten oder gleich eine ganze Menge von Päckchen gleichzeitig zuzubereiten, (wie ich).

Coconut Easter Lamb Cake - Kokosnuss Osterlamm


As with other predominantly Christian countries, in Germany Easter is about re-birth and renewal. Germans, like Americans, celebrate with an Easter bunny delivering eggs and an Easter egg hunt. The Easter Rabbit tradition is believed to originate in Germany, with the first mention in 1684 in a Heidelberg medical professor’s notes. But Germany also has other Easter traditions and the Easter Bunny is not the only one in the egg-delivering business, although he seems to have taken over the German market. Other Easter egg deliverers include the Easter Chick or the Easter Rooster.
Wie in anderen überwiegend christlichen Ländern ist in Deutschland Ostern das Fest der Wiedergeburt und Erneuerung. Was wäre das gute deutsche Osterfest ohne den Osterhasen, bunte Ostereier und eine Ostereiersuche. Man nimmt an, dass die Tradition des Osterhasen seinen Ursprung in Deutschland hat. Er wurde zum ersten Mal im Jahre 1684 in Heidelberg von einem Medizin-Professor erwähnt. Aber es gibt auch jede Mange andere Osterbräuche in Deutschland. Und der Osterhase ist nicht der einzige der Ostereier bringt. Da wären zum Beispiel auch noch das Osterküken oder der Osterhahn.




In many parts of Europe, including Germany, the Easter Lamb Cake is a central part of any Easter table. For Christians, the lamb symbolizes Christ, the ‘Lamb of God’. However, there is a general tradition, not confined to Christians, that Easter is the time of new life and the season’s new lambs.

Many families in Germany have their own slight variation on this cake. Traditionally there are quite a few different recipes for this cake that is baked in the form of a lamb. It is made with either a simple yeast dough version or with a marble cake batter, similar to a pound cake batter.

For this recipe, I created a delightfully moist and coconutty Easter Lamb Coconut Cake, a recipe that has become a “new tradition” at our house. I like the look of the shredded coconut on this baked lamb.
In vielen Teilen Europas, einschließlich Deutschland darf der Osternlamm Kuchen auf der Kaffeetafel nicht fehlen. Für Christen symbolisiert das Lamm, Christus, das Lamm Gottes. Allerdings gibt es auch eine nicht religiöse Bedeutung, denn das Osterfest ist die Zeit neuen Lebens und die Zeit wenn junge Lämmer geboren werden.

Traditionell gibt es viele verschiedene Rezepte für diesen Osterkuchen, der in Form eines Lammes gebacken wird. Man macht ihn entweder mit einem einfachen Hefeteig oder mit einem Marmorkuchenteig, der einem Sandkuchenteig ähnelt.

Man kann sich mein traditionelles Rezept für ein Mamorkuchen Osterlamm und einige meiner alten und neuer Osterbackformen hier anschauen.

Für dieses Rezept habe ich eine herrlich saftiges Rezept entwickelt, ein Kokosnuss Osterlamm, dass bei uns eine "neue Tradition" geworden ist. 




Coconut Easter Lamb Cake 

Ingredients for the Cake
  • 150 grams cups AP (plain) flour 
  • 3/4 tsp baking powder 
  • a pinch of fine sea salt
  • 120 gram unsalted butter, room temperature
  • 150 grams superfine (caster) sugar, divided into 100 grams and 50 grams
  • 1 1/2 tsp pure vanilla sugar
  • 80 ml coconut milk
  • 2 egg whites (L), organic or free range 
  • 40 grams shredded sweetened coconut
Kokosnuss Osterlamm

Zutaten für den Kuchen
  • 150 Gramm Weizenmehl
  • 3/4 TL Backpulver
  • eine Prise feines Meersalz
  • 120 Gramm Butter, Zimmertemperatur
  • 150 Gramm feinster Zucker, einmal 100 Gramm und einmal 50 Gramm
  • 1 1/2 TL Bourbon Vanillezucker
  • 80 ml Kokosmilch
  • 2 Eiweiß (L), Bio oder Freiland
  • 40 Gramm Kokosraspel



Ingredients for the Topping
  • confectioners´ sugar
  • 1 tbsp coconut milk
  • shredded sweetened coconut
Additional
  • a lamb-shaped cake form
Zutaten für den Guss
  • Puderzucker
  • 1 TL Kokosmilch 
  • Kokosraspel
Zusätzlich
  • eine Lamm-Backform



Preparation of the Cake
  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Prepare a lamb-shaped cake form by greasing it and dusting it with flour.Shake out any excess flour.
  3. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  4. In the bowl of an electric mixer fitted with the paddle attachment, beat butter and 100 grams of the sugar until light and fluffy, 3 to 4 minutes. Beat in vanilla.
  5. Add flour mixture in three parts, alternating with the coconut milk and beginning and ending with the flour, beat until just combined.
  6. In the clean bowl of an electric mixer fitted with the whisk attachment, beat egg whites on low speed until foamy. With mixer running, gradually add remaining 50 grams of sugar. Beat on high speed until stiff, glossy peaks form.
  7. Gently fold a third of the egg-white mixture into the butter-flour mixture until combined. Gently fold in remaining egg-white mixture then stir in shredded coconut.
  8. Fill the prepared cake pan with the cake batter. Bake the cake for a good 40 minutes or until a wooden skewer pushed into the center of the cake comes out clean.
  9. Transfer the pan to a wire rack. Invert onto rack and let cool completely.
  10. Decorate the cake with just a dusting of confectioners´ sugar or mix the confectioners´ sugar with the coconut milk and pour the glaze over the cooled cake and sprinkle with shredded coconut. NOTE: this recipe is enough for a baking pan with a volume 1100 ml - in order to avoid any spills while baking, please make sure to the measure the pan before you start baking. If your baking pan is smaller, bake a small cake on the side.
Zubereitung des Kuchens
  1. Den Ofen auf 175 Grad Celsius (Elektro) oder 150 Grad (Umluft) vorheizen.
  2. Die Lamm-Backform mit Butter einfetten und mit etwas Mehl ausstreuen.
  3. In einer mittelgroßen Schüssel das Mehl, Backpulver und Salz mischen. Beiseite stellen.
  4. In der Rührschüssel die Butter mit 100 Gramm Zucker schaumig schlagen. Das dauert zirka 3 bis 4 Minuten. Den Vanillezucker dazu geben und ebenfalls unterrühren.
  5. Die Mehlmischung abwechselnd  mit der Kokosnussmilch zu der Buttermischung geben. Nur kurz unterrühren.
  6. In einer anderen Schüssel, das Eiweiß schlagen und langsam die verbleibenden 50 Gramm Zucker dazu geben. Auf höchster Stufe so lange weiter schlagen, bis das Eiweiß steif und glänzend ist.
  7. Vorsichtig ein Drittel des steif geschlagenen Eiweiß zu der Butter-Mehlmischung geben. Dann den Rest des Eiweiß unterheben, dann die Kokosrapeln ebenfalls vorsichtig unterheben.
  8. Den Teig in die vorbereitete Lamm-Backform geben. Den Kuchen ungefähr 40 Minuten backen, oder mit einem Holzstäbchen in die dickste Stelle des Teiges stechen. Wenn beim Herausziehen am Holz noch Teigreste kleben, muss das Lamm  noch im Ofen bleiben.
  9. Aus dem Ofen nehmen und das Osterlamm in der Form abkühlen lassen. Anschließend vorsichtig stürzen.
  10. Entweder nur mit etwas Puderzucker bestäuben oder den Puderzucker mit etwas Kokosnussmilch verrühren, das Lamm damit bestreichen und mit Kokosraspeln bestreuen. HINWEIS: das Rezept passt in eine Backform mit 1100 ml Volumen, wenn die Lammform kleiner ist, ein wenig vom fertigen Teig abnehmen und einen kleinen Kuchen damit backen.



For this Easter cake you will need a lamb-shaped cake pan.  Alternatively, you can use a rabbit cake form or any other Easter related form. Please note that similar pans are available in the US here.
Für diesen österlichen Kuchen braucht man eine Lamm-Backform. Man kann aber auch eine Hasenbackform oder jede andere Osterbackform  nehmen. Man findet diese Backformen in vielen Fachgeschäften oder online hier.




Dusted with confectioner’s sugar or a coconut glaze with shredded coconut, and decorated with some beautiful tulips,  this Easter Lamb Cake makes a lovely centerpiece and will be enjoyed by children and adults alike.
Das Osterlamm eignet sich als leckere Tischdekoration, egal ob man es mit ein wenig Puderzucker oder mit einer Kokosglasur mit Kokosraspel verziert.

FFwD - Quiche Maraîchère / Quiche mit Marktgemüse


Today´s recipe for the French Fridays with Dorie group is "Quiche Maraîchère" – a quiche with market-fresh produce.
Das heutige Rezept für die French Fridays with Dorie Kochgruppe ist “Quiche Maraîchère” – eine Quiche mit Marktgemüsen.




As with all quiche recipes, making this quiche recipe requires two main steps, namely putting together the pastry and then preparing the filling.

The key to making the perfect quiche seems to be simplicity, as you can see with this tasty recipe.
Wie bei allen Quiche Rezepten, wird auch diese Quiche in zwei Schritten gemacht, zunächst wird der Teig hergestellt und dann die Füllung.

 Der Schlüssel zur einer perfekten Quiche scheint in der Einfachheit der Selben zu liegen, was mal wieder mit diesem wunderbaren Rezept bewiesen wird.




This classic French pastry.is essentially a rich baked custard, a so-called "royale", with eggs, milk, and/or cream and spices, encased in a crisp savory puff pastry, or a short pastry, also called a pate brisée. It is a recipe that can be adapted to suit anything you fancy. One of the nice things about quiches is that you can add pretty much any ingredient you happen to have lying about or just happen to find in your fridge. We also like our quiches with leek, spinach, cheese and onion, or salmon. Whichever filling you choose, the important thing is to ensure whatever it is it will not leak any water or cooking liquid into the filling. This means that you will have to sautée the onions or leeks, for example and that you have to blanch and squeeze out leafy vegetables such as spinach, broccoli rabe or chard.
Bei diesem klassischen französischen Rezept wird im Wesentlichen eine Royal aus Eiern, Milch und/oder Sahne und Gewürzen hergestellt, die entweder in einem knusprig pikanten Blätterteig oder in einem Mürbeteig, pâte brisée, gebacken wird. Es ist ein Rezept, das sehr wandlungsfähig ist. Das Wunderbare an einer Quiche ist, dass man so ziemlich jede Zutat, die man noch so zufällig in seinem Kühlschrank findet, in die Füllung geben kann. Wir essen auch gerne Quiche mit Zwiebeln, Lauch, Spinat und Käse oder Lachs, aber egal für welche Füllung man sich entscheidet, das Wichtigste ist, dass die Zutaten der Füllung keine Flüssigkeit mehr abgeben. Dies bedeutet, dass man die Zwiebeln oder Porree sautieren muss und Blattgemüse blanchieren und gut abtropfen lassen muss bevor man sie unter die Royal hebt. Es eignet sich übrigens nicht nur Spinat, sondern auch Rübstiel oder Mangold, je nach Saison eben.




The Larousse Gastronomique*, the culinary encyclopedia which can be relied upon for all things foodie, as long as they are French, informs us that, although quiche was made with bread dough in days of yore, both short crust and puff pastry are now quite acceptable substitutes. Dorie´s pâte brisée recipe calls for plain flour, sugar, salt, cold unsalted butter, an egg and ice water. As usual, I made the pastry by hand, with the help of my trusted pastry cutter. After some chilling, I rolled out the pastry, placed it into my rectangular fluted tart pan from France, trimmed the pastry edges slightly above the pan, so it would not shrink, lightly pricked the tart base with a fork and chilled some more. Then, I lined the chilled pastry with parchment paper, filled it with dry beans and baked for 15 minutes, removed the paper and beans and baked for another 10 minutes until the pastry was golden brown. Just the usual blind baking.
Der Larousse Gastronomique*, die kulinarische Enzyklopädie, die auf alle Fragen der Feinschmecker, solange sie französisch sind, eine aufschlussreiche Antwort geben kann, informiert uns, dass früher Quiche mit Brotteig gebacken wurden, doch das Mürbeteig und Blätterteig heutzutage durchaus akzeptabel sind. Für Dorie´s Mürbeteig-Rezept braucht man Weizenmehl, etwas Zucker, Salz, kalte ungesalzene Butter, ein Ei und Eiswasser. Wie üblich, habe ich den Teig von Hand gemacht. Wenn der fertige Teig gut gekühlt ist, muss man ihn ausrollen und in die gefettete und bemehlte Form legen. Ich benutze dafür gerne meine Tarte-Form aus Frankreich, dabei ist es wichtig den Teig etwas über dem gerillten Rand der Form abzuschneiden, sonst schrumpft der Teig beim Backen zu sehr. Dann mit einer Gabel einstechen und wieder kalt stellen. Dann den gekühlten Teig mit Backpapier auslegen, mit trockenen Bohnen füllen und für 15 Minuten backen, Papier und Bohnen entfernen und weitere 10 Minuten backen, oder bis der Teig goldbraun war. Das übliche blind backen eben.




Now Dorie lists in her recipe celery, leeks, red bell peppers, and carrots but she also mentions that is a quiche filled with vegetables from the market, hence seasonal, little custard and some cheese. Since red bell peppers and celery do not ever really feature in any of my quiches, I decided to use some lovely spring vegetables, namely the very seasonal white and green asparagus and wild garlic from my garden in this quiche.
Dorie schreibt in ihrem Rezept, das man für die Füllung Sellerie, Lauch, rote Paprika und Karotten braucht, aber gleichzeitig erwähnt sie auch, dass dies eine Quiche mit Gemüse vom Markt, daher saisonal, ist, und außer dem Marktgemüse nur mit wenig Royal und etwas Käse gefüllt wird. Da rote Paprika und Sellerie eigentlich niemals wirklich einen Weg in meine Quiches finden, habe ich mich für saisonales Frühlingsgemüse,  weißem und grünem Spargel und Bärlauch aus unserem Garten entschieden.




For the filling, I peeled the white as well as green asparagus and cooked it for a few minutes in lightly salted water, placed them in ice water and drained them on kitchen towels. Then I prepared the custard as per the recipe with heavy cream. eggs, salt and freshly ground black pepper. I then added some finely minced wild garlic. I placed the asparagus into the tart shell, placed the tart on a parchment lined baking sheet, carefully poured the custard over the vegetables, scattered some Gruyère over the top and baked the quiche for a good 20 minutes at 200 degrees Celsius, lowered the heat to 175 degrees Celsius and baked for another 10 minutes.
Für die Füllung habe ich den weißen als auch grünen Spargel geschält und ihn für ein paar Minuten in leicht gesalzenem Wasser gegart und dann in Eiswasser abgeschreckt. Dann auf Küchenpapier abtropfen lassen. Für die Royal hab ich, wie im Rezept vorgegeben, Sahne, Eier, Salz und frisch gemahlener schwarzer Pfeffer gemixt. Den Bärlauch habe ich kleingeschnitten und dazu gegeben. Dann habe ich die vorgegarten Spargelstangen auf den Teig gelegt, habe die Form auf ein mit Backpapier ausgelegtes Backblech gestellt, die Royal über das Gemüse gegossen, mit etwas Gruyère bestreut und gute 20 Minuten bei 200 Grad und dann weitere 10 Minuten bei 175 Grad gebacken.




You should let the quiche settle for a while before you remove it from the tart pan or cut into it. You can serve the quiche warm and freshly baked but it is also good cold or at room temperature,  it makes wonderful picnic fare. Let me just add that we certainly loved the Quiche Maraîchère with White and Green Asparagus and Wild Garlic.
Man sollte die Quiche für eine Weile auskühlen lasse bevor man sie aus der Form nimmt und mit einem scharfen Wanne in Stücke schneidet. Man kann die Quiche entweder frisch gebacken und noch warm servieren, oder man genießt sie kalt oder bei Zimmertemperatur. Wir nehmen Quiches zum Beispiel auch gerne zu einem Picknick mit. Ich sollte vielleicht noch erwähnen, dass uns die „Quiche Maraîchère“ oder „Marktgemüse-Quiche mit weißen und grünen Spargel und Bärlauch" ausgezeichnet geschmeckt hat.

FFwD - Visitandine


Today´s recipe for the French Fridays with Dorie group is ”Visitandine” – a simple white cake with a small-grained crumb.




The recipe for this French Visitandine is very similar to the recipes for Coconut Friands that we baked back in April 2012 and Financiers that we baked back in April 2013. These are all my favorite kinds of cakes. Simple, yet elegant. Not cloyingly sweet and very versatile.




You can use all kinds of fancy and pretty baking pans for these cakes. There are the madeleine molds, financier or tartlet pans or even muffin pans but then there are also pie plates or springform pans. I decided to divide the batter in two and used heart-shaped pans.




Dorie mentions in her recipe that the her friend Claudine Martina , the author of this recipe, likes to use a “plat à tarte” because using it, the cake bakes into "a nice flat galette”. That is exactly what I wanted my cakes to look like, nice flat and elegant.




The recipe is fairly simple, all you require is egg whites, plain flour, fine sugar, a pinch of sea salt and melted unsalted butter – as usual, I substituted the vanilla extract with pure vanilla sugar. Other than that, no changes to the recipe.




The name of the cake goes back to the “Visitandine” or “Visitation Order” (in German “Orden von der Heimsuchung Mariens”) formally the Congregation of the Visitation of Holy Mary, a Roman Catholic order of nuns founded by St. Francis de Sales and St. Jane Frances de Chantal at Annecy, France, in 1610. The order was originally destined for charitable work, visiting and caring for the sick and poor in their homes, as well as for prayer. To this day, many Visitandines are devoted to education.

Apparently the nuns baked these simple cakes to sustain them during times of famine – the egg whites in the batter were considered to be a good source of protein.




Since I was quite taken by the elegant look of these cakes, I did not really want to serve them with whipped cream or turn them into strawberry shortcakes – I chose to dust them liberally with confectioners´ sugar to showcase the simplicity and elegance of these cakes. And since we are in the midst of rhubarb season around here and since I am a devoted rhubarb addict and love to use this wonderful spring vegetable (not fruit) in my baking (you might want to take a look here or here), I served the Visitandines with a very seasonal rhubarb-strawberry compote and some more fresh strawberries. Perfect!
